PENGARUH KOMPOSISI TEPUNG TAPIOKA DAN SAGU TERHADAP KUALITAS BAKSO KERANG POKEA (Batissa Violacea Celabansis Marten 1897)

Abstract


ABSTRACT  
The aims of this study was to analyze fatty acid concentration of fishes taken from different producers in Konawe District,
Southeast Sulawesi. This research was conducted at Konawe District, and tested at the Laboratory of Integrated Research
and Testing, Universitas Gadjah Mada. Statistic analysis used was descriptive analysis with three repetitions (n=3) to provide
general representation of the data. The presented results were the averages of standard deviation. The results show that the
fatty acid concentration was varied between producers. The relative percent value of unsaturated fatty acid with double five
loop methyl cis-5-8-11-14-17-Eicosapentaenoate (EPA) in producers A, B, and C were 5.96%, 3.63%, and 2.93%,
respectively. Meanwhile, the relative percent value of unsaturated faty acid with double six loop cis-4-7-19-13-16-19docosahexaenoate
(DHA)
in
producers
A,
B,
and C were
3.51%,
6.35%,
and 3.02%,
respectively.

ABSTRAK
Tujuan penelitian ini adalah untuk mengetahui kandungan asam lemak yang diambil dari produsen berbeda di Kabupaten
Konawe Sulawesi Tenggara. Penelitian ini dilaksanakan di Kabupaten Konawe serta Laboratorium Penelitian dan Pengujian
Terpadu (LPPT) Universitas Gadjah Mada. Analisis statistik yang digunakan dalam penelitian ini adalah analisis deskriptif
untuk memberikan gambaran umum tentang data yang telah diperoleh dengan ulangan sebanyak 3 kali (n=3). Hasil yang
disajikan merupakan nilai rata-rata ± standar deviasi (SD).  Hasil penelitian penelitian menunjukkan terdapat perbedaan
kandungan asam lemak setiap produsen. Nilai persen relatif asam lemak tak jenuh banyak dengan lima ikatan rangkap;
methyl cis-5-8-11-14-17-Eicosapentaenoate (EPA) pada produsen A, B, dan C berturut-turut 5,96%;  3,63%; 2,93%. Nilai
persen relatif asam lemak tak jenuh banyak dengan enam ikatan rangkap; cis-4-7-19-13-16-19-docosahexaenoate (DHA)
pada produsen A, B, dan C berturut-turut 3,51%;6,35%; 3,02%.
