Abstract


ABSTRACT

The purpose of this study was to determine the contents of proximate, iron, zinc, cholesterol, and fatty acid profiles from fresh mangrove shells (Telescopium telescopium), fresh Kalandue shells (Polymesoda erosa), and boiled blood shells (Anadara granosa L.). Shellfish in this study came from the city of Kendari. The analysis included: levels of proximate, iron, zinc, cholesterol, and fatty acid profiles. The dominant proximate content of the three types of shells was protein, which was 53.91% in mangrove shells, 69.72 %% in blood shells, and 77.07 % in kalandue shells. The highest iron and cholesterol contents were obtained in fresh kalandue shells that reached 74.9 ppm and 145.77 mg/100g, respectively. Meanwhile, the highest zinc content was obtained in the boiled blood shell (63.1 ppm). There were 10 types of fatty acids in fresh mangrove shells, 13 types of fatty acids in fresh kalandue shells, and 9 types of fatty acids in boiled blood shells. In addition, kalandue shells had chain fatty acid (SCFAs) namely Butyric Acid (C4:0).

ABSTRAK

Tujuan penelitian ini untuk menentukan kandungan proksimat, zat besi, zink, kolesterol, dan profil asam lemak dari kerang bakau (Telescopium telescopium) segar, kerang Kalandue (Polymesoda erosa) segar, dan kerang darah (Anadara granosa L.) rebus. Kerang pada penelitian ini berasal dari Kota Kendari. Analisis meliputi : kadar proksimat, kadar besi dan zink, serta kadar kolesterol dan profil asam lemak Kandungan proksimat yang dominan dari ketiga jenis kerang tersebut adalah protein  53,91 % pada kerang bakau, 69,72%% pada kerang darah, dan 77,07% pada kerang kalandue. Kandungan Zat Besi dan kolesterol tertinggi pada jenis kerang kalandue segar masing-masing sebesar 74,9 ppm, dan 145,77 mg/100g, sedangkan kandungan Zink terbesar pada jenis kerang darah rebus (63,1 ppm). Terdapat 10 jenis asam lemak pada kerang bakau segar, 13 jenis asam lemak pada kerang kalandue segar, dan 9 jenis asam lemak pada kerang darah rebus. Selain itu, pada kerang kalandue terdapat satu asam lemak rantai pendek (SCFAs) yaitu Asam Butirat (C4:0).
